WHere is a simplified version of a drink from a new cocktail list. It's a batch premix which is loaded full of flavours of a holiday season, which makes it excellent for hosting a holiday party. Reserve the remaining syrup you can use for brunch beverages, sweets, or for additional servings of this cocktail.

Yields 10 people
To make the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Cocktail (produces 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
Making the Syrup: Combine every ingredients inside a pan, heat until it reaches a light boil, agitating to dissolve. Next, remove from the burner allowing it to cool fully. Pour to a sealable bottle, seal and refrigerate it in the refrigerator, it can be stored for about a month.
For the Batch Mix: Combine all the liquid ingredients in a big jug, let it rest for 60 minutes, then filter it best through a fine cloth, to ensure it's fully clarified.
To serve: Pour 85ml of your cocktail base into a stirring glass packed with ice, and agitate carefully for one minute to chill. Filter to a frosted cocktail glass or similar, top with a few cranberries adding the final touch by giving it a quick spritz of mandarin oil over the drink.
